Why doesn't my butter brown?

Two times now I've tried to brown butter. It melts, it gets foamy, it bubbles, I stir, and I never get browned bits. Just now, I let it bubble for at least 10 minutes - nothing. I did not stire constantly - I let it sit for several seconds between stirs. What am I doing wrong?

You need like 30 minutes

mine browns a lot and I always throw it away and start over. just now realizing I don't know the difference between browned and burned.

Wait longer? It's not immediate (although more like 10-15 min than 30). I have never stirred constantly either.

Are you putting enough in the pan? You need a certain amount (I don’t know how much), or else it won’t brown properly. You can’t make brown butter from one pat of butter.

I've had this experience because I was afraid of burning the butter. Try turning the heat up a bit.
