I have a 2 pound bag of roasted (unsalted) almonds

Ideas for using them?

Eat them? They're such a delicious and healthy snack food.

You could make them into almond meal/flour and bake with them

Are you interested in soup recipes? Lot of them out there, especially creamy/thickened with almonds.

Oh, I can totally do that (ask me what happened to the other bag).

To be more specific, I'm thinking of desserts and possible sides/entrees that feature almonds. They're a bit much to throw on a salad (I usually use sunflower seeds and sometimes broken walnuts in salads).

I've thought about blanching them and seeing what I might do with ground almonds, but definitely thinking dessert, holiday thing.

Make almond brittle.

Make trail mix by adding better things to them. Like m&ms.

Make marzipan, or make frangipane and use it in a Bakewell tart?

Make almond butter (buzz in food processor adding some salt and honey to taste) then use for almond butter bars.

Now you're talking!

Almond brittle also sounds good but I like the pastry ideas. And maybe also a rolled sponge. . . get some cherries in there too perhaps.

And it turns out I have 4 pounds, not 2. So I can eat my almonds and have them.
