Menu help! Festive vegetarian dinner party ideas

I’m hosting a small dinner for dear friends and the woman we’re celebrating is vegetarian. I make a truly fabulous simple lasagna (red sauce) and was thinking to have with it grilled asaparus, salad-maybe bread but wondering about a couple other additions. I’m personally not a huge fan of eggplant but was thinking if there’s a flavorful, garlicky recipe someone has or maybe stuffed mushrooms? I was thinking of picking up appetizers from Sababa for during our cocktails (so I don’t default to cheese) and any wintery cocktail suggestions welcomed (she loves Manhattans.) I’ve got dessert covered but looking for some ideas. I’m a good cook so can handle some challenges!

I loved stuffed mushrooms, you could also grill zucchini and/or eggplant.

We just do Italian herbs, cheese and the stems, similar to this. I’ve also done them with crab but not for vegetarians.

I have a really challenging and absolutely mouth watering one: Seared scallops with linguine in bacon cream sauce. Freaking delicious. so good i couldn't keep my genitals and feet out of there LMFAO

I'm vegetarian (and now vegan) and I think one of the tricky things for non-vegetarians is to get a bit creative with veggies. I personally like more spicy/exotic foods like the recipe above. Since your a good cook, why don't you try something a bit more adventurous?

In terms of appetizers, why not consider Bindaas, which has some great ones like the golgappa and the spicy cauliflower?? The web site Cookie and Kate has some great options too.
