Ice cream cake - what is the best?

I don't think I've had an ice cream cake that beats good old Carvel. Is there anything better?

Note, I generally haven't liked the kind that pairs layers of cake with layers of ice cream

I’m a baker, and carvel is the best. You can’t use any “real” fats like butter or cocoa butter (ie real chocolate) in an ice cream cake. They just don’t taste or feel good frozen. So you need whatever chemical goodness is in the carvel cakes to make it work.

Ben&Jerry's does cakes. If you like their ice creams, their cakes are the best.
