I would love to explore recipe options and experiment with flavorful lemon mousse or lemon cheeesecske without upsetting my gut and liver. Does anyone have a good recipe to share?

| I can’t figure out how cheesecake could be dairy free, but any lemon meringue pie should be pretty easy to do? E.g. https://www.allrecipes.com/recipe/15093/grandmas-lemon-meringue-pie/ but with nondairy butter. (I haven’t made this specific recipe but it looks pretty standard?) |

| Trader Joe’s actually makes a decent vegan cheesecake. There are some recipes that use silken tofu. Personally cheese replacements make me sad so I stick to vegan baked goods. |

Not sure if this is exactly what you had in mind, but if you're up for experimenting it's worth a try:
https://cooking.nytimes.com/recipes/12363-lemon-pudding-cake I've made it with almond milk and it was really good. And a non-dairy butter to grease the pan, of course. The texture is sort of like a molten chocolate lava cake, but not as heavy. |
