What to do with a huge bag of spinach

I bought it at Costco last weekend thinking I would eat it for salads during the week, but that didn't happen. I want to do something with it before it goes bad. Any suggestions or recipes for something to do with it that will last a little longer than just making a salad (like maybe a soup)?

You can always freeze for smoothies. I buy Costco spinach too and can never finish, it freezes well

Freeze for smoothies (I put just a little in with each smoothie, along with berries and banana)
Saute with olive oil, fresh garlic (and a touch of salt) as a side dish.

Cook in heavy cream + salt and serve it as a side. Spinach cooks down to a much smaller size

Instant pot saag paneer. I don’t make a lot of Indian food but this recipe actually tastes really good. You can also do tofu instead of paneer.

Make a ton of this, double the spinach and recipe. You can freeze it before or after you cook it. Sooooo good.

Sautéed with garlic and olive oil, it cooks down to nothing! My youngest will gladly eat a whole Costco bag worth of sautéed spinach 😂
