Vegetarian Chili Recipe?

Anyone have a recommendation for a vegetarian chili recipe without a bunch of funky ingredients? One that could simmer in a crock pot all day would be great too. Thanks!

I’d just make your favorite recipe and omit meat and maybe add extra beans or tofu

Not sure what you consider to be weird ingredients but I’ve always liked this recipe:

I just use a mix that is vegetarian and use vegetarian crumbles or the fake meat or all beans.

I made sweet potato, black bean and corn chili yesterday. I used the recipe that’s in NYT Cooking website. Very simple ingredients and very delicious.

I'd try crushed tomatoes, kidney beans, diced potatoes, sliced carrots, little chopped onion. and maybe dry TVP to substitute beef. Add chili powder, cumin, salt, pepper. splash smoked paprika. good luck!

Here’s a great recipe:

1/2 onion diced small
2 cloves garlic minced
3 cans of beans, not drained
1 can chopped tomato
3tsp chili powder
1tsp ground cumin
1/4tsp ground allspice
1/4tsp ground coriander
1T cider vinegar
1/2tsp salt

Sauté onion and garlic in oil until softened. Add remaining ingredients and cook over medium-low heat, uncovered for 45 minutes. Season to taste.

Not at all. I usually use kidney beans, black beans and garbanzos.

Serious Eats bean chili is very good - depends on what you mean by funky ingredients though. It uses a paste made from 4 different types of dried chiles and is very good.
Other ingredients are just usual stuff you'd likely have in the kitchen/ pantry.

Lentil chili - I think you can google it.

Made with vegetable broth, canned tomatoes, cumic, chili powder, peppers, onions.

Yes. That is funky ingredients. If I have no go to multiple stores to source out various species of dried peppers, Hard pass.
