T2 diabetes: if you have it, how often do you eat high-sugar or high-carb foods?

Do you just eat the same diet that you had before and make sure to have enough insulin?

No. Under 10g a day.

I have a scoop of ice cream once a week and take a little more insulin to cover it. I eat mostly lean protein and fruit vegetables the rest of the week, with an occasional granola bar in the afternoon when my blood sugar tends to drop.
