Practice the moves against younger or weaker defenders (or a dummy defense) then move up to a tougher level as you improve on the move. You will only get better if you are constantly challenged by defense that makes you work.

Have an older sibling who plays? Have them defend. Frustrating at first but helps in the long run. Repetition is key.

Go on YouTube and type in soccer footkills and you'll get plenty of ideas. When my kid was little U6/U7/U8 we would play 1v1 in the basement for hours. Small was maybe 5 yards by 10 yards and he just tried to get past me. He loved to play 1v1 against me so bad that I could use it as an award to get him to do whatever. He'd ask me to play 1v1 and I'd say did you do your juggle chart (he'd do 1000 total juggles (give or take) and mark down what his record for most consectutive juggles was). After 30 days, he'd give his sheet to his coach. And he'd have some footskills to do. 30 toe taps, 30 brazilian toe taps, 30 tic tocs, 30 sole rolls, 30 roll step stops, 30 single foot snakes (outside insides), two footed outside insides, Vs, Beckenbauers, etc. Then we'd take some time for him to just try to keep the ball away from me for 30 seconds at a time so he can apply his footskills to escape and also work on him shielding the ball from me. And then we'd play 1v1. By 7 years old, I couldn't beat him anymore. I would juggle with him most of the time. I couldn't break 50. But he was in the 100s by 7 years old and 1000+ plus U9.
