Replacement for pancake batter?

Recently I have started making pancakes (using packaged pancake batter). I put a ton of fruit, then just enough batter to stick it together. Or I pour in a pureed veggie mix (spinach / avocado etc) and add a bit of batter to make it into a pancake.

I make a bunch of these up ahead of time and then grab one or two for breakfast. It is a good way for me to get a few servings of fruit / veggies in easily and quickly.

I am wondering if there is a substitute I could use for the pancake batter that would be healthier? I feel like pancake batter is just a lot of empty carbs and I am trying to lower my carb intake. I thought maybe of oatmeal or something similar but I am not sure what would still taste good and be very easy to make and convenient to grab and go. I have used packaged muffin batter in a similar way but it is even less healthy than the pancake batter.

What else might work well?

Why not just make a smoothie instead of going to the trouble of making these pancake concoctions?

Make pancake batter from scratch and use whole wheat flour. you can also substitute some whole oats or wheat germ for some of the flour to really up the protein and fiber.

Kodiak mix, it's whole grain and has protein added.

+1 this is weird. Make a big batch of smoothies and freeze them, add fruit to a cup of plain yogurt, make those muffin tin fritattas. No processed carbs in any of that.

+3 to the Kodiak flour mix. I have also seen a bag of Paleo pancake mix at Costco but I haven't tried that.

RE: smoothies - I don't like the taste of veggie smoothies and I try to avoid dairy for the most part. I do occasionally make a greek yogurt and fruit smoothie

Baked oatmeal? When I make mine it's like 1/2 fruit and 1/2 oatmeal. You can make it in muffin tins.

I like kodiak mix but another good recipe is 1 egg, 1/4 cup oats, 1/4 cup cottage cheese blended in a blender.

I made amazing blueberry pancakes for my breakfast this morning with Kodiak and a ton of blueberries. This was my carb meal of the day- protein and veggies for lunch and dinner.

I love the paleo pancake mix at costco.
