Please share your favorite crock pot recipes with me. I am 9 months pregnant and am finding it hard (no energy and very little time when I come home from work) to get dinner ready for my DH, DD (15 months old) and au pair every night. TIA.

To the post roast poster: What cut of meat do you buy? Do you just throw everything in raw or have to pre-cook any of it? How long do you cook it for? As you can probably tell, I'm new to using a crock pot. Thanks!

It is not for the crockpot, but it works perfectly. Cook it on low for 8-10 hours. Yummy.

Hearty Turkey and Vegetable Soup

Ingredients:
-1 lb uncooked ground turkey
-1 cup chopped celery
-1/2 cup thinly sliced carrot ( 1 medium )
-2.5 cups reduced sodium tomato juice
-1, 14.5 oz French cut green beans, drained
-1 cup sliced fresh mushrooms
-1/2 cup chopped tomato ( 1 medium)
-1 tablespoon dried minced onion
-1.5 teaspoon worcester sauce
-1 teaspoon dried basil
-1 teaspoon dried oregano
-1/2 teaspoon garlic powder
- 1/2 teaspoon of sugar
-1/4 teaspoon salt
-1/4 teaspoon ground black pepper
- 1 bay leaf


1) In a large skillet cook turkey, celery, and carrot until turkey is no longer pink; drain off fat.
2) In a 3.5 quart slow cooker combine turkey mixture, tom juice, drained green beans, mushrooms, tomato, onion, Worchester sauce, basil, oregano, garlic powder, sugar, salt, pepper, and bay leaf.
3) Cover and cook on low heat setting for 6 hours or on high heat setting for 2.5 to 3 hours. Remove and discard bay leaf.


I add extra veggies and a little more broth. IT is really yummy and my 12 month old loved it too! Also I use fresh herbs when I have them but dried herbs taste good too. It is also really good with bread or cornbread

CROCK POT SWEDISH MEATBALLS

1 1/2 c. fresh bread crumbs
1 c. milk or cream
1 1/2 lbs. ground chuck
1/2 lb. lean ground pork
[I buy whatever the ground meat mix they have at the store, I think its beef/pork/veal, but whatever the preference is]

2 eggs
1 med. onion, chopped fine

1 3/4 tsp. salt
1/8 tsp. cardamom, optional
1/8 tsp. pepper
1/8 tsp. nutmeg
1/4 tsp. allspice


Soak bread crumbs in milk for 5 minutes in a large mixing bowl. Add beef, pork, eggs, onion, 1 1/2 tsp. salt, allspice, nutmeg and cardamom. Mix well. Shape into 1 inch balls. Place on broiler pan and bake for 15 minutes at 400 degrees.

Put browned meatballs in crock pot. Add 1 can beef consomme or broth, 1 can Cream of Mushroom soup, 1 can Cream of Golden Mushroom soup, and one package of brown gravy mix. Cover and cook on low 4-6 hours (high 2-3 hours). When I did this, it was a bit thick, so I added some milk (or sour cream), but that's not really part of the recipe.

Tomato beef stew. 1 lb of beef cubed and 1 pkg of frozen stew vegetables. Cook until almost done then add 1 can of crushed tomatoes during the last hour.

CHICKEN CROCKPOT TACOS


3-4 Chicken Breast (Depending on how many people)
Place Chicken Breast on the bottom of crock pot.

1 Package of taco seasoning
Pour on top of chicken

1 large Jar of Salsa
Pour over chicken and seasoning

Let cook a few hours..It will get shredded, stir occasionally.

Cook your taco shells, and voila.

The meat gets so moist and shredded, it makes taco's soooo delicous.

Crock Pot Recipes


Pepsi Pork Roast

3-5 lb Pork roast
Package dry onion soup mix
1 can cream of mushroom soup
1 can Pepsi (not diet)
4 potatoes, cut in halves

Place meat and potatoes in crock pot. Sprinkle with soup mix. Stir together Pepsi and mushroom soup. Pour over roast and potatoes. Cook on low for 4-6 hours depending on size of roast.

Chicken and Veggies

Salt and pepper 4 chicken breasts
Throw them in the crock pot.
Dump in a bag of frozen mixed vegetables.
Open a can of cream of mushroom soup and pour over top of chicken and veggies.
Cook for about 4 hours on high, or 6 hours on low.
Serve with quick-cooking couscous or rice.

Pot roast

3 lb beef pot roast
small bag baby carrots
4 potatoes, quartered
1 onion, cut in wedges
2 envelopes dry onion soup mix
¾ cup water

Mix soup mix in with water.
Put in veggies and then roast.
Pour soup mixture over roast.
Cook on low 8-10 hours or high 4-6 hours

Chicken and dumplings

4 chicken breasts
2 tbsp butter
2 cans cream of chicken soup
1 small onion, finely diced

Place all ingredients in slow cooker and fill with enough water to cover.
Cook on high for 5-6 hours. About 30 minutes before serving, add in a package of refrigerated biscuits, torn in quarters. Cook until dough is no longer raw in the center.
Serve with microwavable steamed veggies.




Harvest Ham Supper

Small bag baby carrots
4 medium sweet potatoes, quartered
1 or 2 lb. boneless ham
1 cup maple syrup

Arrange carrots and potatoes in bottom of crock pot. Place ham on top of veggies. Pour syrup over top.
Cook on low for 6-8 hours.

Corned Beef brisket (leftovers make yummy Reuben sandwiches the next day)
Put a couple of sm. bags of un-drained sauerkraut (or 1 large one) on the bottom of your crock pot...top with a med. sliced onion...then place the corned beef brisket on top with the contents of the seasoning packet that comes with it...add some extra water to cover about half way and cook on low for 7-8 hrs (if you don't want the kraut to taste as sour, add a couple of tablespoons of sugar)
Serve with microwavable steamed green beans.

Ham & Cheese Potato Dinner
Mix 1 bag of frozen diced potatoes with onions & peppers (thawed), 2 cups shredded Cheddar & Monterey Jack cheese blend, 1 can cream of celery soup and 8 oz. of sour cream in the crock pot...cut a 3 lb. fully cooked smoked boneless ham in half lengthwise and lay on top of potato mixture...cook on low about 5 hrs


Chicken Cacciatore

6 chicken breasts
1 (28 oz) jar spaghetti sauce
2 green bell peppers, seeded and cubed
8 oz fresh mushrooms, sliced (or can use a jar of canned)
1 onion, finely diced
2 tbsp minced garlic (jarred is fine)

Place chicken in crock pot. Pour spaghetti sauce over top, then add peppers, mushrooms, onions and garlic.
Cook on low for 7-9 hours.
Serve over cooked angel hair pasta.


Beer Pork Chops

1 onion, sliced
4-6 pork chops
1 (12 oz) can or bottle of beer (not stout or ale)
2 cubes chicken bouillon

Arrange onion slices on bottom of crock pot. Place pork chops over top. Pour beer over top and pop the bouillon in. Cook on low for 6-8 hours. FYI, you can throw some quartered potatoes in there, too, before cooking if you want. If not, serve with instant mashed potatoes and steamed veggies.





Mediterranean Chicken Breast and Wild Rice

1 pound chicken breasts
1 cup wild rice blend
10 cloves garlic, smashed
½ cup oil-packed sun-dried tomatoes
½ cup capers
2 cups water
½ cup lemon juice
¼ cup olive oil

Season chicken with salt and pepper. Place chicken in crock pot. Add rice, garlic, tomatoes and capers. Stir well.
Mix water, lemon juice and oil in small bowl. Pour mixture over chicken and rice. Stir once to coat chicken. Cook on love for 8 hours. Serve with a side salad.

Chicken with Stuffing

4 chicken breasts
1 can cream of chicken soup
1 ¼ cups water
¼ cup butter, melted
1 (6 oz) package cornbread stuffing
1 bag frozen cut green beans

Pour green beans into crock pot. Place chicken in crock pot. Top with soup. In bowl, combine water, butter and stuffing mix. Spoon mixture over chicken. Cook on low for 4 hours.
Serve with refrigerated jellied cranberry and you have a quick, yummy quasi-Thanksgiving meal!

Stuffed Peppers

1 package (7 oz) Spanish rice mix
1 lb lean ground beef
½ cup diced celery
small onion, chopped
1 egg, beaten
4 medium green bell peppers, halved lengthwise, cored and seeded
1 can (28 oz) whole peeled tomatoes undrained
1 can tomato soup
1 cup water

Set aside seasoning packet from rice. Combine rice mix, beef, celery, onion and egg in large bowl. Divide meat mixture evenly along bell pepper halves.
Pour tomatoes with juice into crock pot. Arrange filled peppers on top of tomatoes.
Combine tomato soup, water and seasoning packet in medium bowl. Pour over bell peppers. Cook on low 8-10 hours.



Cherry Delight

1 can cherry pie filling
1 package yellow cake mix
1 stick butter, melted
1/3 cup chopped walnuts

Place pie filling in crock pot. Mix together cake mix and butter in bowl, it will be crumbly. Spread evenly over pie filling. Sprinkle walnuts on top. Cook on low 3-4 hours or high 2 hours. Serve warm with whipped topping or ice cream, if desired. Also good on its own! You can easily double this recipe to serve more people. Makes your house smell soooo good!
