Please share your best/easiest crock pot recipes

My mom sent me the following crockpot recipes... and they were truly delicious.

The whole family loved them and kids asked for me.

1) Creamy Macaroni and Cheese (Paula Deen)
(This one made great leftovers for lunches. I didn't have any dried mustard so I skipped that.)

2 cups uncooked elbow macaroni (an 8-ounce box isn't quite 2 cups)
4 tablespoons (1/2 stuck) butter, cut into pieces
2 1/2 cups (about 10 ounces) grated sharp Cheddar cheese
3 eggs, beaten
1/2 cup sour cream
1 (10 3/4-ounce) can condensed Cheddar cheese soup
1/2 teaspoon salt
1 cup whole milk
1/2 teaspoon dry mustard
1/2 teaspoon black pepper

Boil the macaroni in a 2 quart saucepan in plenty of water until tender, about 7 minutes. Drain. In a medium saucepan, mix butter and cheese. Stir until the cheese melts. In a slow cooker, combine cheese/butter mixture and add the eggs, sour cream, soup, salt, milk, mustard and pepper and stir well. Then add drained macaroni and stir again. Set the slow cooker on low setting and cook for 3 hours, stirring occasionally.

12 servings

2) Beer Pot Roast

(This one could not be simpler. I never was a fan of recipes that called for a can of soup, a packet of that -- but this was so deliciuos and everyone loved it -- all my kids, all our friends that we had for dinner... that I am making an exception in this case. I made this with a pot roast, but it made more sauce than needed, so I also added some ground beef that I happened to have leftober from another night... and it was delicious both ways. Kids were scaping the plates with rolls)

Directions -- Put pot roast (about 2 or 3 pounds) into crock pot. Add 1 can condensed cream of mushroom soup and 1 packet onion soup/dip mix. (don't add any canter) Pour on top 1 can beer. (I used Bud). Cook on low for 8 hours.

3) Chinese style Country spare ribs
(SOOOO delicious, kids really loved this one. Great with some pineapple fruit salad and rice.)

1/4 cup soy sauce
1/4 cup orange marmalade
1 tablespoon ketchup
1 large garlic clove, crushed
2 to 3 pounds boneless country-style pork ribs


Combine soy sauce, marmalade, ketchup and garlic. Brush on both sides of the ribs. Place in a slow cooker or crockpot and pour remaining sauce over all. Cover and cook on low for 8 to 10 hours. Serves 6 to 8.

I haven't tried any of these but I am tempted to because they are all just 2 ingredients:

A) 3 lb. boneless pork shoulder roast and 1 cup barbecue sauce (bottle); cook 8-10 hours.

B) 3 lb. cubed boneless lamb shoulder and a 1.8-oz. box leek soup mix. Stir in 1-1/4 cups water; cook 8-10 hours.

C) 1 lb. turkey kielbasa and 2 lb. fresh sauerkraut, rinsed. Stir in 1/3 cup water; cook 4-6 hours.

D) 4 chicken legs (about 3 lb.), skin removed, and a 26-oz. jar green and black olive pasta sauce; cook 6-8 hours.

E) 4 turkey drumsticks (about 3-1/4 lb.), skin removed, and 1 envelope (from a 2.4-oz box) savory herb with garlic soup mix. Stir in 1-1/4 cup water; cook 6-8 hours.

F) 1 lb. pork chops (cheap shoulder cuts are very good) and 1 jar spaghetti sauce. Cook on low for 6-8 hours. The meat falls off the bone!

(I added a teaspoon of tomato paste per one of the comments/suggestions. It was GREAT. The recipe made a lot of extra sauce, which I reheated for lunch the next day and ate as soup after shredding the left-over chicken.)

These crock pot recipes look good...making me think I really should get that crock pot I've been thinking about.

Another alternative is to have the other adults in house cook too (husband, au pair). I've been pregnant and staggeringly tired. I wouldn't have gotten through it without my husband's support and (occasionally rudimentary) food.

Black Bean Chicken

1 package of chicken parts
1 container of salsa at whatever "heat" you like
1 onion
1 can of black beans

Put chicken, then everything else in slowcooker, then cook on low for 6-8 hours. Chicken should be falling apart and you may want to help it along abit by shredding it with a fork. We eat this several different ways: as a stew with Fage (Greek yogurt); with shredded cheese lettuce and tomato on soft tacos; over rice or noodles.

Easy and cheap -- and you can have dinner on the table as soon as you get home, not after 20 minutes to boil the water for the spaghetti!


Crockpot Spaghetti and Meatballs


Ingredients:
1 lb. frozen precooked meatballs
26 oz. jar spaghetti sauce
1 onion, chopped
1-1/2 cups water
8 oz. spaghetti pasta, broken into 3" pieces

Preparation:
Combine meatballs, pasta sauce, onion, and water in 3-4 quart crockpot. Cover and cook on low for 6-8 hours. Stir well and add broken spaghetti pasta. Cover and cook 1 hour on HIGH until spaghetti is tender, stirring once during cooking. Serve with Parmesan cheese. 4-6 servings

Buffalo Chicken Soup

1 large pack chicken breast or chicken tenderloins
5 stalks celery, sliced large
1/2 onion chopped
2 tablespoon celery salt
3 cloves garlic chopped OR 2 teaspoon garlic salt
handful of parsley
1 cup buffalo sauce ( I use Pete's)
lots of black pepper
2 containers low sodium chicken broth
1 cup lowfat milk

COOK the items above in crockpot for 3 hours on high or until chicken is falling apart (can cook all day on low setting)

Once chicken is falling apart add the following

6 ounces cubed Velveta
1 pack shredded sharp cheddar
More buffalo sauce or milk to taste

COOK another hour

To thicken melt 1/4 cup butter and 1/4 flour on oven, add milk to form thick sauce
Slowly add to crockpot with wisk to avoid lumps

Serve - delicious

I buy frozen Cornish Game Hens at Aldi's supermarket for about $2 each, and a pack of bacon for another $2.

Let the game hens thaw in the fridge overnight. I remove remove 6 slices of bacon from the pack and save the rest for the weekend.

In the morning, I put the following in the crockpot (6 quart): Directions as from "A year of Crockpotting": http://crockpot365.blogspot.com/2008/10/crockpot-bacon-wrapped-cornish-game.html

2 cornish game hens, thawed -- skinned if you can
6 slices of bacon
1 tsp kosher salt
1 tsp thyme
1 tsp rosemary

"In a small bowl, mix your dry spices. Rub the spice mixture all over the birds, inside and out. Lower the birds into the crockpot. I thought I had put them both breast-side down, but I think only one actually was. Take your strips of bacon, and wrap two one way and one the other on each bird. See if you can tuck an end inside of the cavity.

Cover the crockpot and cook on low for 6-8 hours, or on high for 4-5. I cooked ours on low for 4 hours, and then switched it to high for the last hour.

Discard the bacon before serving."

This came out really well -- delicious!

Poster-Are you still around? I've made similar recipes (though without the beer) and the roast has turned out way too salty. Do you use low sodium mushroom soup? Or does the beer cut the salt enough?

Well, the beer does cut the salty taste down a bit, and also you can add some extra milk, but I have to be honest -- I think one reason the kids lap this up is, well, the salt! (-; And probably the MSG that is in the onion soup, I'm sure.
