I like to treat it like Chinese congee which includes options like:
- soy or maggi sauce - green onions - ginger - fried garlic crumbles - cilantro |

I view it as just another grain. So I tend to toss in anything I would put into a stir fry (so I would precook the veggies) and maybe top with a fried egg. I love how soothing the warm oatmeal is with a little oozing egg yolk is all I need for comfort food.

I like to treat it like risotto. Make it with chicken stock and parmesan - add in any of the following: mushrooms, peas, asparagus.
