Virginia is a right-to-work state. That means employee can quit for no reason with no notice or employer can fire the employee with no notice. I'm not sure about MD or DC.
OP: she was crying bc she was overwhelmed. She is going to have to find a new nanny in a week. There is nothing you can do except keep working or deliver her a nanny that has been vetted. Any cheesy, emotional thing will not help her find a new nanny in a week.
