They're here to party, but if they can't handle their job and their partying, then rematch. Why pay to have substandard childcare and someone complaining?

2) Give AP a warning that this behavior is noticeably affecting performance on Monday and she needs to be more responsible or a curfew is possible. Do this in writing and cc the LCC as a heads up that it's an issue.

OP cannot give AP a curfew on her free time, she just can’t.

She doesn’t even say AP performances are affected on Monday just that she complains, like every young adult does when they have to go to work on a Monday.

Can't you just not set the alarm when you go to bed, but have her set it when she comes in? We have a last person in bed policy with setting the alarm so as not to wake others.

We do not have a curfew on Friday and Sat night. We do have a curfew on Sunday night. And our APs are welcome to have other APs sleep over (they still have to tell us though). This is all documented in our handbook. I know that other HFs have different rules. Your house - your rules, OP. However, you do not change the rules halfway through the year. You can change the rules for your next AP.

However, if you AP complains about being too tired to take care of the kids on Monday morning, I would definitely address that.
