If you are switching, they are not paying you for the cancelled day but they are making up the cancelled day to another day. Personally I would always say no and that I am already busy on that day.
I think you need to look for another family.

Honestly, the family seems like a family that just likes having some flexibility and OP has not really set any concrete boundaries for them. No reason to look for another family. Just hash it out with them, OP.
