Give her a debit Visa or MC, and then she can get the cash she needs as well as charge groceries and such, and you end up with an itemized list of what she uses it for.
So, let's say you put in $2K/mo. You see that she's taken out a total of 1K in cash, and you know cleaners + yard people = $800. Then you know to ask about the additional.
OP here. Nanny already has a AmEX in her name but it is the cash (actual dollar) payments I am thinking about. Now she reminds us to leave cash once a week for the cleaning person and every other week for the cleaning service. Even with her reminders - we still forget.
That's why I'm saying to open a checking account on which she is the agent. It will give her no access to actually get into your banking information, but will allow you to issue a debit card in her name. You would only have to remember to put cash in once a month. And is AmEx taken everywhere she shops? Always good to have MC or Visa for backup.
Our nanny has one. It works really well. She can use it for gas, little things when out with the kids, or to pull cash out in a situation like the one you describe.
I'm glad your nanny always has enough cash on her to cover your forgetful moments, but why should she have to?

Perhaps she's hinting that she'd like to be compensated accordingly.
OP back and no - we offered her a raise this year and she turned it down since we started paying her healthcare insurance.
I do not believe this. Only a fool would refuse to be compensated for additional job duties.
