You should pay her. She could have left you with no notice at all.

I'm hoping your new nanny will be more kind with your daughter. It's not OK to expect a "good morning" before engaging with her, this is not professional.
Boundaries yes, being this demanding : no.

In most situations, I would definitely pay the Nanny.

However, this Nanny sounds a little too strict regarding your DD.

I wouldn’t pay her any more than a week’s pay if I were in your shoes.
