While I fully concur that a Nanny is not responsible for the actual hands-on care for your dog,
It is her responsibility to make sure the dog doesn’t run away.
My NF has an indoor cat.
While I am not responsible for caring for it, I am very careful whenever the front door is open to make sure she doesn’t try to run out.
It is just common sense in my opinion.

Our nanny is asked to make sure the dog does not leave when people go in or out, and to keep the water bowl filled (we fill it before we leave for work), especially on hot days. That is not too much to ask.
