The fact that she had such amazing references means that this is unusual-she doesn't get sick often, or at least hasn't in the past. This could very well be the only time she gets sick for the next 2 years! I can't believe you are firing her over this.
Probably a big blessing in disguise for her, though. She now has the opportunity to be with a family who aren't jackholes.

She may never have missed a day of work but people get sick. Do you want your young kids to be exposed to that? And, things happen. She cannot help she got the flu.

So she was willing to come in and YOU told her to stay home and then fired her? Sounds like she should have checked your references better - you suck.

You absolutely can! I suffer from severe flu symptoms for days after getting a flu shot. It's not at all uncommon.
