In my experience, having a contract heads off these kinds of issues pretty well. It is a document that you can point to that reminds them what they actually agreed to. Since I began using a contract I rarely have these issues anymore, and saying "that wasn't in our agreement but if you'd like to revise the responsibilities and compensation to reflect this change, we can do that," has always worked. I've never been fired for refusing to do something I never agreed to.

Also, always log in what you did during the various nap-times so they don't assume you just take naps all the time.
