Not for me. I call these pseudo-holidays - the eve's of both Christmas and New Years, the Friday after Thanksgiving. People just expect to get them paid & off-duty, but they are not officially holidays.
Nanny here. I never expect to get Christmas Eve, New Years' Eve or Black Friday off; I certainly never did while working in other sectors prior to nannying! They aren't holidays and many people don't get them off.
Places that don't give these off:
Hospitals
Jails/Police/Bonds
Most retail
Most sales
Criminal law firms (frequently someone is on call...)
Many banks
Some libraries
Most service (electrician, plumber, etc.)
Yes, you have them off if you work in education, some libraries, some offices, etc. But there are tons of people that work on Eves and then the holiday as well.

There are 7 days between Christmas and New Year's, which means a full week off plus the holidays on either end. Where's the missing days?
A week off means five working days since the weekends are always off. There are only four working days between Christmas (25th) and New Year's Day (1st). You would be shorted one day in 2015 if just given the Christmas week off.

If that is the week your employer designates as your week, so be it. Some do, some don't. Personally, I end up working most holidays, but I stipulate that the major holidays (Christmas, Thanksgiving, New Year's and Independence) are paid 2 or 2.5x depending on rate, and others (Memorial and Labor) are 1.5. But I don't have kids and I live-in.

I personally think one week you can choose and another week, she can choose.
This is only fair to her. Because she has given you plenty of notice when she wants to take her vacation, 2 months is pretty good notice in my opinion.
Plus, in theory, it just wouldn't be fair of you to dictate exactly when she gets to take her vacation.
I say try to work with her or find back up care for the weeks she wants off.

+1 same here. This may not be norm though for dcum nannies and parents who are wealthy compared to most of country.
