If I were her, as a nanny myself; I would ashamed to be begging to you like "pleased keep me and hired me because I think I deserve the Job and this is list of all things I did this week, just to let you know". No way.
It's obvious to understand that she didn't match your expectations. And of course, you are completely right since you are looking for an experienced Nanny. How come she wouldn't take the lead and still need instructions.
Don't feel bad, just move on and start looking for someone else.

I feel bad as she’s been trying hard but it’s clear that she’s overwhelmed and it’s not going to work long term. Tomorrow we’ll pay her for the week and then I’m wondering if I should give her some feedback or just say it’s not a good fit? I wouldn’t mind having her come over to help out occasionally but I need someone with more experience and confidence
Why are you only paying her for one week if she's been there for two weeks. She's lucky she isn't working out for an employer who is cheating her out of 2 week's pay.

But trust on your gut, if you feel she is not the right fit for your family. Be honest and let her go. So you can avoid future issues if you don't trust on her, caring your children and if she is not qualified enough for the experience you are looking for.
