I would fire you because you're neurotic as hell. I am also high risk but I just sent someone out for tacos for me because I wanted tacos. And I ate them straight out of the wrappers. Get a grip. Good Lord, neurotic people irritate the hell out of me. Is anyone literally dying there, OP? If not, go chill somewhere and listen to some good music and smoke a joint or something. Life is short. Enjoy it. Worry gets you nowhere fast.
Neurotic?!
I’m in Michigan. We went from ok to third in the country in under 2 weeks. Ranked by population, were 8 (2010) or 10 (current estimate, pending complete census). Half of my family is afraid to even have track cerise’s delivered, because they’re over by Detroit and it’s really, really bad.
I’m with OP completely. Follow social distancing. No outside packaging comes inside. Clean touch points before touching. And stay home as much as possible.

Your MomBoss is being a little reckless here, surprising considering that she has underlying health issues.
Your charges should NOT be playing at a public playground during this time!!
If your MomBoss is not working, then she should be just fine w/out your services for now.
If you can financially swing it, then it may be best for you to avoid them until this entire situation blows over.
Good luck.

Secondly, tell the parents that it has become clear that you and they have different views on what is safe and not safe, and you're not comfortable working with them anymore. Find a different job if their values don't align with yours.

I was just reading today how the expert say we don’t have to go too crazy about spraying groceries
Most cases are human to human
Yes those viruses leave on surfaces, but most likely the viral load is too small to get you sick
Plus you’re killing all the good bacteria that actually is helping your immune system to fight things
