Sounds like you already listed many ideas yourself. He’s 2 and won’t even remember this. Just do something cute and low maintenance. Anything you do will be overshadowed by the parents anyways.

make your own stepping stones?

do handprint painting on aprons or canvas bags. (Had a girlfriend do this w/ my kids and give it to me for my b'day - an all time favorite and thoughtful gift).

at the end of a messy day you can have fingerpainting in the bathtub - great way to get clean while also having fun.
