Don't focus on the 1 hour with the 2 kids.
Focus on you working below market rate- and fix that.
Get some good data in your area of nanny rates, and ask for that $1, $2, or $3 raise. Any more than that may seem greedy.

This is exactly right. These parents are taking advantage of you. Nannies need to be constantly aware of this tendency. Just start over with a family if you need to.

Of course you should be paid extra when you care for older children and you need to address this situation. Your employers are using you send have no respect for you. If they do not rectify this inequity then it is time for you to find a new position. In future, make sure you address these issues.

You should definitely get paid more when you have both children. Say you get paid $18 for 1 child then you should get $20 for two.
Example;
6:30-7:45 $20 (for 2)
7:45-5:00 $18 (for 1)
5-6 $20 (for 2)
If the older ones is home all day then you get paid $20 per hour for the full day. I do agree with pp, if they don’t want to pay more than tell them you can come in at 7:30 (when they’re leaving) or dad needs to care for the oldest when you’re there. If you like the job talk to them first and if they say they can’t accommodate it, then find another job.
Example;

5-6 $20 (for 2)

PP again, assuming the Dad is in the house and you do want to address it, you could maybe ask that one morning per week you come in later? like 730 instead of 630?
