This, and having another person in your home, and a paid caregiver means that you want to plan for extenuations. You aren't there to practice your version of "leave that alone" parenting.

For the person who had three and didn't childproof, what were their ages? How did you deal with diapering one, or feeding one, and keeping a toddler away from everything else?

I kind of can't believe the nanny would agree to this. It's doable with one (or if both are not mobile), but really impossible for one person with two,

Don't do it. Or have them secure the tippy furniture. My mom tells a horrifying story of me as a toddler. She was in the other room and heard a crash -- I had pulled down a bookshelf and it could have easily crushed me, but for the fact that it was a narrow room and the shelf hit the other wall. 35 years later the memory still haunts her. Be careful! And babyproof!

Would it be possible for you to be the host family OP??

If that idea is not feasible, then I strongly suggest you continue your search.

You won't want to deal w/the constant daily anxiety of wondering if your child is safe or not.

how common is standard babyproofing in a nanny share? DH and I plan on doing it in our own place as DS is crawling and starting to pull up. We're selling a few pieces of tippy furniture, storing a wine rack, strapping dressers and bookshelves to the wall. I visited a nanny share I'd like to join and the couple hasn't babyproofed their place, specifically the room where the kids play. A few tippy pieces of furniture made me nervous. I asked about it and they say they and their nanny just watch baby closely and don't feel the need. I don't want this to be a deal breaker but I know it'll nag at me.
