The parts in bold are things you need to fix if you want your situation to change. They clearly aren't "getting the hint" and you're being passive. If you don't say no, then they won't stop. If you don't question it, why should they change? Do they even pay you for the extra time?

The underlined part is something small. The phrase is "at their beck and call," not peck.

Unless I guarantee that hour (by paying my nanny for it regularly) I don't feel like I can ever get upset with her for having plans outside of our set hours.

That said, she makes my life SO, SO much easier when she can say yes and I appreciate it that she does say yes whenever she can.

This is completely your fault. You have allowed yourself to be taken advantage of. Why do you feel like you can't say no when someone makes a request of your time up that you did not agree to?

I try to be as flexible as possible as a nanny. I am never late and can't imagine telling my boss no. I would assume they would be upset with me or would find someone who wouldn't tell them no.

There is a point where flexibility goes too far. If you are afraid to say no, you're not being flexible, you're allowing yourself to be taken advantage of. Either grow a back bone or don't complain.

I think a week's notice is just fine. Can't blame them for asking either since it sounds like you've done it in the past. Just say no, apologize, say you told her weeks ago you'd pick her up and leave it at that.

Tell them no again and leave it there. "I would if I could, but I have a commitment to keep." If they continue to badger you, you'll need to get firm. Reference the notice you're required to give, etc. Tell them that your commitment to them is from the hours of X-Y.

It varies - sometimes it is weeks ahead of time, sometimes it's the day before - but the short-notice ones are always asking if I can come in early; for late end times they always give me at least a week's notice. I think it's ok that they asked and it's absolutely ok for you to say yes or no depending on your schedule.

I don't think there was anything wrong with them asking. What you're describing is not short notice. That being said, they are asking not demanding, and you are free to say no. You can't/don't want to change your schedule, so you say no. NBD. If they make it a big deal, THAT is when you have a problem.

MB here. No, I would not. I would never expect someone to change their schedule at all. I would definitely ask, and would be completely fine with a no.

I was asked Saturday night to change my schedule this week twice to stay late 45 mins (so adjusting plans) and come with in 45 mins early another day. Problem is i already offered to give friend ride to train station two weeks ago so she could take train to airport that morning in plenty of time for me to get to work on time but not that early. I have worked for this family for over a year and this is first time i can't easily adjust my schedule (constantly changing evening plans on short notice which i have been ok with so far)

With a week notice would you except nanny to change plans twice in a week ?
