At this point it doesn't matter when she asked or you whether you get paid time off, the fact that she threatened your job after you asked once for a day off speaks volumes. She could have just said no, but instead went further and basically said you were replaceable and not a valued employee.
If I were in your place I would have quit on the spot, but I have savings. I totally understand your reason for leaving and would give two weeks notice as soon as you have a new position lined up.

When did she tell you that she needed you on New Years? Was it recently, like this week? or months ago? If she changed her mind and said she needed you on New Years you should have said "I'm sorry but I can't come in" ( as it wasn't part of your originally days).. If she said it months ago and you agreed to come in and now your changing your mind then i agree with your employers. You agreed to it. You can put your foot down and tell them and pray you don't get fired or you can suck it up and work like you agreed to do.

Maybe their personal issue is that their marriage is on the brink and they need a day to reconnect as a couple. You shouldn't care why they need you to work. Whether it's a minor out-patient surgery or to go shopping, it's none of your business. Look at our economy - you should be down on your knees thanking your lucky stars you have a job.

You're in the wrong.
You ACCEPTED this. They TOLD YOU which days you would get off and YOU didn't think ahead and negotiate for more. Now you're taking your anger out on them for wanting you to honor your commitment when really, you should be angry at yourself for not having done a better job negotiating.
I don't think it's something to fire an employee over, but I would not give you that as a paid day off if you said you were taking it, and would not look upon you well for not honoring your commitments.
If you are not happy with the holidays you have, then after the new year, renegotiate your contract with your employers.

Is this even a firing offense? I mean one day?
working 12.5 hours a day, no vacation, no sick time, three days off a year. now tell me that you work in NY, are paid $3 an hour and that your employer is an Indian diplomat and have goods news for you (one being you are not going to be her slave anymore).
I am jocking my I am seriously curious to know how much you make for that kind of work. and yes, I would quit too (and I am not a nanny)

I'm a nanny geniuses. Its not about being fun to work for. Stop signing agreements you aren't happy with. That's how you get a job you like. You want paid holidays, including New Years? Ask for it. You want guaranteed hours? Ask for it. Don't want to do laundry? Don't agree to do it. Its really not that difficult to understand.

Find a new position, if this isn't the straw that breaks the camel's back, something else will be and you will be out on your ass (pardon my language). You clearly go above and beyond. Not only do they not recognize that, but you aren't even being afforded basic benefits like ONE DAY OFF.
It may be the difficult choice, but you will be happier in the long run. Good luck.
