Outside of that, I'd absolutely request Thanksgiving, day after, Christmas Eve, Christmas Day, 1/2 day New Year's Eve, New Year's Day, Good Friday, Easter is a Sunday (so no need to add in), 4th of July, my birthday and Memorial Day. I believe this covers the major holidays. If everything is set in stone in your contract - nothing she says even matters, but if she's making a big deal, at least hear her out since she does have the kids all week. If it's such a big deal where you can't get off on those days or find an alternative, find a new nanny.

I would have little or no patience for a nanny who would pout about Columbus Day but be silently and happily entitled to have the day of Thanksgiving off.
Don't entertain the pout.
+1 MB here. I have the same holiday schedule as you (days after holidays off). I explained it when we contracted. I'd tell her she can use vacation if she really feels the need to take these days off.
