OP hired the nanny knowing she could not, for religious reasons, work on Fridays. If OP's schedule has changed this is not a good enough reason to fire the nanny.

I'm a seventh day Adventist and that means you don't work on the sabbath which starts at sun down on Friday night and ends at sun down on Saturday night. Working on Friday should not be a problem as long as she's done before sun down

Step 1) Talk to your nanny honestly. Tell her what you told us (i.e. that this was unexpected for you) and ask her if she'd be willing to work every Friday.
Step 2) If she isn't, hire a 1-day-a-week nanny for Fridays. This could be a college student or could even be a household assistant who could provide childcare and cleaning/cooking services if that's something you desire. It is surprisingly straightforward to find great candidates available 1 or 2 days a week, particularly when it's a set day and doesn't require flexible hours or the potential for extra work on random other days.

Tell her exactly what you just said here, see what she wants to do. It's pretty simple. In fact, most of the problems on these boards could be very easily solved by TALKING with your nanny/NF.

I am a FTM. My employer had initially agreed to let me work 4 days a week once I returned home from maternity leave but now it turns out they need me to work Fridays starting in January. We hired our nanny who is Seventh Day Adventist with the understanding that we would probably only need her from time to time on Fridays. Now we will need her every Friday. I really like our nanny a lot, DS loves her, we trust her, I am not sure how to broach the subject with her.
