Card and dinner to freeze are good. Or a donation to the charity if there is one designated.

Or wait until it seems like she's having a tough day (or has to take off to deal with estate related stuff) or something like that and then do something nice for her.

I often give prepared food that has been portioned and put into freezer bags. I cook it myself. I have given cards and sent flowers too.

My father died recently and my employers sent flowers. It was a very kind gesture and meant a lot to me.
