Try preschool prep videos and Leap frog videos. Try the hand held leap frog and vtech games. Also, try just abc, letter and shape flash cards. And, books.
What specific things If you don't mind me asking?

We read a lot. He can count. We use short sentences as encouraged by the ST.

So, if we are going outside, we say "let's get shoes, and go outside' she said it's easier for him to understand.

Of course it would be wonderful if he does and you can continue to work with him on these things (in a playful manner) but I wouldn't be worried about it. It is not uncommon for children at this age to know some of their colors, however. I would primarily be working on his speech delay, if I were the mother.

Though I don't think it's necessary to push the ABCs too hard at this age you did ask for different activities so I will give you some. Here are some activities that I have saved to one of my interest boards:

Here is a link to a color matching memory game -- your child may be too young to work on the memory aspect but you can get those colored disney paint samples from Lowes or Home Depot and they are good for working on colors http://pinterest.com/pin/199636195953321183/

This website has a coloring page for each letter of the alphabet -- http://pinterest.com/pin/199636195952608258/

In this activity your child matches the color of the pipe cleaner with the color of the hole to put it in (put the blue pipe cleaner in the blue hole, etc.) http://pinterest.com/pin/199636195952602704/

practice shapes with stickers http://pinterest.com/pin/199636195952531595/

craft sticks and velcro, these can be arranged to make shapes and letters http://pinterest.com/pin/199636195952500775/

I'm sorry, OP, but your 21 month old child does not need to learn the ABCs and 123s. Kids that age don't even know what they mean. Certainly incorporate them a little bit in everyday stuff, but your child should be learning through play, reading books, taking walks, etc.

What is this nanny getting paid? Maybe you can get a more qualified caregiver.

He is 21 months, you shouldn't be forcing him to learn, it should come organically. The best why to learn is through play. Design activities that involve colors and point them out as he plays like "this puppet is green and so is your toy car!"
Descriptive conversation and reading are best. But your main focus should be helping him improve his speech instead of "teaching" him colors. Also involving the nanny in his therapy is important to his improvement.

Understand that children learn in different ways and understand concepts at different ages/levels. There are 3yr olds who don't know their colors. Not push him if he's not ready, just talk and point things out. By the way have you ever considered him being colorblind?

The parents and the nanny need to take some workshops where they can all learn that 21 month old toddlers do not need the abc's, but colors, certainly.

Isn't the nanny included with your child's therapy appointments? That's where you start.

Nannies what is the best way to have our nanny teach our child colors/ABCs? He's picked up counting but not so much colors, or the alphabet. Our child does have speech delay, which he gets help for but I don't I don't see why This would be an issue with his memory for colors. His therapist said he has been making progress speech wise. So this shouldn't impair his learning. He's 21 months old. Our nanny is older, and I just want to help her help our child out. What she learned about kids,is from experience. So when it comes to being creative with education, she needs more of help with.
