I'd offer her twice her normal rate (for me that'd be around $350 per day). Pay by day, not hours. Vacation plans are unpredictable, so she's gonna be pissed if she's promised 4-5 hours everyday then you've decided you wanna take the kids along instead and she doesn't get paid for it. So a set amount per day is a good idea. Obviously pay for airfare, bring her along to the grocery store if you plan on cooking if your hotel room has a kitchen, or pay for any meals she goes out for with you, transportation to the airport, etc. And if you can, give her a few days off after you get back to unwind.
