If you have young children, I'd keep it very easy and simple. When we had a nanny for our young kids, meal prep was limited to either very simple boiling of pasta or rice, or sticking a pan of chicken or fish or whatever (that I have prepared in the evening and left covered in the fridge) into the oven for X minutes at X temperature.
