Interviewing isn't a game to me, and hiring a nanny (or anyone) isn't something I do lightly or without doing it thoroughly. I will never hire anyone "on the spot". I check references, I meet other candidates, I evaluate how a candidate behaves prior to, during, and following an interview, before I make a decision. I think your attitude is misleading to the OP, who has perhaps simply run into a thorough and professional potential employer.
