Typical vacation is two weeks. In some shares, the nanny gets to choose both weeks. In others, the nanny chooses one week and the families choose the other. 
In this area, it's standard to guarantee hours. This means if you take an extra week of vacation, you still pay the nanny. 
Make sure people know if you plan to pay on the books. Some nannies and families do not. 
Health insurance is not required, but a nice perk.

Hosting: do you want to host or have the other family host? The host family has more wear and tear on things, but they get the benefit of not having to do drop off and pick up. Ask about pets when meeting families. Keep in mind which family is closer to playgrounds, libraries, etc.

It's up to you if you want to find the nanny first or the family.
Some nannies prefer share babies to be close in age, others are more flexible. It all depends on your wants and needs.

Doubles: a double stroller is a must. Please don't buy whatever junky thing you can find on CL. The nanny will use it often, and it's much easier if the stroller is decent to push/maneuver. 
Two high chairs. There's a plastic one you can get anywhere that buckles onto a regular chair. It's about $30 and is great. Easy to clean. 
The hosts will need a room to put the pack n play in for the second baby.
