Four days & eight pages worth of great advice later, and OP still hasn't bothered answering a single solitary question or come back to update this thread since her initial post?
I wouldn't bother with any more advice folks, it appears it's not appreciated.
I'm seeing OP's character a lot more clearly now...

Is she staying the night? If she is, I would definitely be a god host that had food for her mom to eat for that day. I also become sick after eating hotdogs, always have. Throwing up and similar. Those things are nasty, but I have a similar reaction to commercial sausages. I wonder why? Is it garlic or what... Might research that. I can't eat shade plants.
+1 Or buy a salad. Salad mix+grape tomatoes and some cucumber is easy. Or get a pre-made salad or a veggie tray.

In the past I have done a more elaborate menu but since this year we are keeping it simple and serving hot dogs and mac and cheese (along with salad, fruit and baby carrots)
My mother has been on a perpetual diet since my sister was born 32 years ago. She does not have any health restrictions she just doesn't like to eat certain foods. she told me that she absolutely could not eat hot dogs and that she had to have something else for dinner. She has been going on on about making something in a crock pot because the menu is not acceptable. I'm just about to cave because I'm tired of hearing her kvetch about it
