I don't know how other moms do it-all I know is that I don't think it is the best choice for moms with dependent children. For many reasons-financial, time, marriage, ect... You have the rest of your life to travel after their brief childhoods.
Are you seriously implying that it's inappropriate for a mother (and apparently only a mother) to miss 8 whole days out of her child's life? Wow.

It sounds like part of the issue is that you guys are tight on money, can't eat out much, you "harp" on dh's spending, and now you're going on a nice trip while he's home caring for the kids. Maybe it feels inequitable and he's resentful?
The people who go on lavish girls' trips probably also have dhs going on lavish boys' trips.

Your mother shouldn't be paying for YOUR trip, especially when she doesn't want you to go. Bad idea.
Your husband has VALID reasons for being against the trip, whether or not you agree with them. Bad idea.
Money is obviously a big issue, since you keep bringing it up. Bad idea.
Normally, I would be all for a nice "solo" vacation without the family.....but not in this case.

I don't know anybody with young kids who goes on girls' trips that last 8 days. Maybe a night or two.

And when DH is away for a week, it's stressful and chaotic. There is no parent to say "please take over" when your kid is running up your last nerve. I don't know what our marriage would be like if DH and I didn't recognize and appreciate what the other person has to go through when one of us is away.
My point is if you treat your husband in real life like you talk about him on here, I suspect this just the last straw for him. There is no mention anywhere that you understand that 8 days alone with the kids seems daunting to him and you understand. I just suspect that the reaction to this trip is a symptom of far more serious issues with the marriage.
