Putting this in the crockpot now, this soup is wonderful. Reporting back. This was excellent!!! I used chicken broth instead (that's all i had in my freezer). I also ran about 1/3 of the soup through the blender foe texture. It was very fast and easy!

Nigella Lawson's Chicken Soup
3 pounds chicken wings
1 carrot, peeled and halved
1 onion, peeled and halved
1 cinnamon stick
1 3-inch piece of ginger, peeled

Cooked, shredded chicken

Simmer, uncovered, until liquid has reduced to about half and chicken flavor is strong, about 1 1/2 to 2 hours. Pour through a fine mesh strainer into a bowl and discard solids. Allow broth to cool and then refrigerate overnight. When ready to serve, remove layer of solidified fat. To serve, warm soup with shredded chicken.
