I'll be honest, it's been a quesadilla and salad heavy week because of work. Too busy to cook.

More like shredded cheddar or Mexican blend, but generally on point. There's a song: https://youtu.be/8yrSCoEsmqA?si=72G98dfRkxh3bcnf

As a white kid who grew up in the Midwest It's very in point.

The other thing ended up being homemade tamales from THE tamale lady!! I’m so excited, I get them one to two times per year and they are amazing. I got some veggie and some pork. I want to eat one for breakfast.

Thursday is leftovers.

Friday is a Giada shrimp and rice dish, with a sumo orange salad (it's sumo season!)

Saturday is the Milk Street lomo saltado, which will be served with french fries (just from frozen) and a Peruvian salad I found to go with it, since the saltado is a Peruvian recipe.

Sunday dinner is at my mother's.

I made an Italian Cream Cake on Monday, so that should have us covered for desserts.

My favorite.

Fascinating. Did you grown up with it as a common thing? I had never made one (nor heard of it) until it appeared on my cake list (I'm the person baking through the list of Southern Living vintage cakes).
