Annnnnd this is how you ruin a pancake party.
Nobody wants a casserole on a regular Tuesday, let alone at a party.

Every single person we invited said yes which I was not expecting at all so we have like 60 people coming to our house. I very unexpectedly lost my job on Friday so now I am in a tailspin and stressing about money. I'm going to serve pancakes (premaking them the night before) with a bunch of toppings- berries, nuts, chocolate chips, lemon curd, whipped cream, etc and a big fruit salad. Then I'm doing OJ and apple juice, coffee, tea, and mimosas. Do I need to serve additional sides like bacon and sausage too or do you think I can get by with what I have currently?
How does a 3 year old even know 60 people?
Serve pancakes with fruit, fake maple syrup and pray 50 don't show up.
Relatives and a few friends. Just supplement with other food.

It's a 3 year old's birthday. OP doesn't need to stress out and break the bank when it's overkill and kids are easy to impress at that age.
How will pancakes and sprinkles and leftover champagne break the bank, exactly?

Help” I guarantee my friends would help and we’d turn it into a crazy event. A couple of people make pancakes, someone makes bacon or sausage etc. This is what friends are for. Get the husbands to help as well with bloody Mary’s and mimosas.
I’m not trying to be a debbie downer or shit on OP because it’s awesome how much effort and thought they have put into this..
But.. I’d personally, never go all out and stress myself out over a 3 y/o’s birthday… if your kid remembers a birthday that young they are very much in the minority. Most adults don’t have but a couple memories older than 5 or 6, and even when they do it’s not anything more than a couple flashes/general awareness of the day.
And yet you ARE being a Debbie Downer, and misguided to boot.
Parents don't do things for their kids, especially little kids, to make memories. They do it to build relationships by having fun together.
I hope you don't have kids yet.
