This seems like a really bizarre thing to get upset about.
Continually excluding OP and her DH in the emails about their own kids even though they have asked her repeatedly to include them seems like a really bizarre thing for MIL to do.
Why is MIL refusing to include OP? I think because MIL is a narcissist and doesn’t want to share the positive feedback she is getting by boasting about her grandkids. She wants to be seen in the family as the controller of all family info and she wants to be the main one receiving compliments on behalf of her family members. She probably excludes other family members from the email chain too when she’s boasting about them. MIL has bizarre behavior indeed.

Because it’s weird to be pressed for information about your kids only to have it be used as a narcissistic supply for an attention seeking person. She isn’t including OP or the kids because it’s about her receiving attention and praise. She probably also embellishes from time to time to amp up the praise and doesn’t want to be corrected.
MIL sees (insert whatever) as my accomplishment as a grandmother, look I’ve got a better grandchild than you. She isn’t celebrating the accomplishment of or for the actual child. She cuts the kid who did whatever and the parent out of the picture.
Classic competitive and narcissistic granny behavior.
Look, it's all gross and narcissistic. Nobody really cares about your kid/grandkid's minor accomplishments.
I don't overshare every thing my kids do but the op described some big accomplishment by her daughter
