What's perplexing is that the Ukrainian supporters seem to think there will be some sort of negotiated end to the conflict shortly after November and holding this land until then will benefit them. But what makes them think Russia would negotiate anything if Ukraine was suddenly cut off from aid?

So that was a good hit. Bridge over the Seim, which definitely hurts Russia.
But I think you are thinking about the Kerch Bridge. That would be the real deal. A hard one to destroy, but Ukrainians have had a couple of solid attempts. It's presently extremely well defended by all of Russia's defenses. And Ukraine is trying to hit it. The Kerch Bridge would be a very big deal.
