Maybe it's because I know a lot of Persians (I lived in Iran years ago) but I think it's because they are disassociating themselves from the current regime. I can respect that and call them Persians. The name of the country doesn't always have to define the people.
To say you are "Persian" is affected.
I say "Persian" and I'm Eastern European! It's because I went to high school with a lof of Persians and have a bunch of Persian friends.

Aren't all women from Iran, Persian, and vice versa?
No, only some Iranians identify as Persians. For example, there are Iranian Kurds who do not identify as Persian. And Iranian Azeris.

She is holding twin newborns, maybe that has something to do with it?
But yeah, she looks pretty, like any other high maintenance wealthy lady in her 40s. The second picture it looks at though some fillers went awry.
High maintenance? More like the type to buy the cheapest but most recognizable "luxury" products like goyard/gucci belt/hermes oran/GLA/X3
She's Persian with kids so of course it's a Black X3.
White pls and don’t forget leased. The other car most probably a Land Rover.
