Because there are people who work in industries like consulting, law and Government in which "credentials" have an out-sized importance. They can't imagine not having them. And the social circles they travel in reinforce this.
Lehigh, for example, is a much better Engineering school than Princeton, as is Georgia Tech. But, that difference is not understood or appreciated by the Ivy-obsessed.

US World News ranks Leigh #61. Princeton #17 (Harvard’s even lower for engineering), Georgia Tech at #4.
You can dispute the precise rankings, but Lehigh is nowhere close to Princeton.
The majority of students do not attend engineering school. Most will to go on to graduate school.
Sorry, but Princeton, Harvard, Yale and similarly elite schools open more doors than Lehigh. Even within the Ivies, a Yale degree is worth more than a U Penn degree.
