My family member is highly allergic to dogs, and we got an Italian Water Dog, a Lagotto Romagnolo. 35 lbs medium dog, extremely curly hair (they are ancestors of the Poodle), and require grooming every 6-8 weeks. They are a wonderful, extremely friendly breed, require lots of exercise, love to jump in all bodies of water, and love to chase and retrieve balls. I've trained mine to walk and hang out off leash without straying, get along with all dogs at dog parks, and play gently with kids of all ages. If you get cute haircuts, they can look like puppies their whole life. If you are up for an active working breed, I highly recommend a Lagotto.

And it would be really sad for you to get a dog only to give it away because you had zero idea what you were getting into.

Oh, do the dogs know when they’re being fostered vs owned? Are they briefed before entering a home?
