Our neighbor sent us a note that we wake him up. He must be extremely noise sensitive as the walls are not exceptionally thin, his bedroom doesn’t abut our kitchen, and these small appliances run for maybe 3 min tops. I can’t hear them if I’m in my bathroom on the same floor! We are very quiet otherwise, minimal talking, no tv or radio, and we’re out the door by 7 typically. In my opinion, the loudest sound we make in the kitchen is opening and closing the patio door to water plants and that is only 1/3 of the year.
I’m unsure about a next step: respond verbally, ignore/don’t respond, explain the above in writing?

But 7 a.m. on a weekday is totally appropriate smoothie time, or food preparation of any sort. It is purposeful, time-appropriate behavior. Be glad it's not 6 a.m.
OP said it was 6am. She was making the noise for 3 minutes at 6am because she leaves at 7.
Not precisely at 6 am. Sometime between 6 and 6:10, DH grinds a tiny amount of beans for his coffee. Sometime between 6:20 and 6:30, I make a smoothie. We leave no later than 7, but often earlier.
Yep, that’s annoying. You are waking him up twice every day.

Making Loud noises (e.g. Blenders are about 78-85 dB) before 8 a.m. is rude -- weekday or weekend. If you live in a shared space, you *should* be extra vigilant.
A shared wall is not enough of a shared space that people shouldn’t do ordinary thinks like make a breakfast smoothie or blow dry their hair.
But what OP is doing is NOT normal morning behavior. I love how the onus is on the "victim" and not on the OP to exhibit polite behavior.
I disagree. It’s very normal behavior.
Is she “allowed” to use her hairdryer? After all that’s loud, too.
Before 8 am, on a weekday, is rude? You're just lazy. Get out of bed already. OP: grinding coffee and making smoothies before work on a weekday are reasonable expectations. I would completely ignore it.
