1/2 lb pasta (I use linguine, fettucine or even spaghetti)
2-3 cut up cooked boneless chicken breasts
bag of coleslaw mix
jar of ginger sesame or teriyaki marinade

Sautee coleslaw mix in hot oil a few minutes until nicely browned, add chicken, mix with marinade, pour over pasta. People rave about this and it's so simple..

My DD calls this "fancy" chicken in contrast to the plain baked chicken we make with salt, pepper, and parsley.

Girard's Champagne dressing.
Boneless skinless chicken breasts

Pour dressing over chicken and bake at 350 for 25 minutes.

Chone-nome (I don't know if that is phonetically correct). But me, too Sometimes, throw in some sausages from TJs.

worlds easiest lasagna (im kind of sick of it but kids ask for it every week):

no boil lasagna noodles
jar pasta sauce
already shredded mozarella
tub of ricotta
frozen spinach

Defrost and drain spinach, mix with ricotta and mozarella. (i usually add an egg but have done without). Layer noodles, cheese mixture, and sauce.

I often add fresh or frozen kale, and top with parmesan. But kids could take or leave both of these. I assemble in the morn before school and work and put in fridge, then in oven when we get home. Biggest drag is that it does take 45 minutes to cook.

This is cheating if you make homemade pesto, but I love to make the pesto ahead of time, and then do a slow cooker pesto rice and bean recipe with chicken (or veggie) broth, uncooked rice, add white beans later, then right before serving mix in pesto and parm cheese. one of my fave vegetarian comfort foods.

wow! PP, that sounds so awesome. Can you pls share the recipe? Thanks!!
