We lived in Asia for a few years and did this and were disappointed by how crowded/chaotic the panda sanctuaries were that were close to Chengdu the city. Also, the panda nursery slots are now really limited for foreigners.
We enjoyed much more the elephant sanctuaries of Thailand (there are many, check for the ones that are ethically managed, and some allow you to give the elephant a bath and feed them) and visiting the orangutans and proboscis monkeys of Borneo.

Wolf Park in Indiana (near Purdue) is a visit I still remember as adult. You can learn all about wolf packs (and other animals like bison). In addition to tours, they also have a youth camp.

If you go to Rome, my kids LOVED the cat sanctuary at Torre Argentina (itself an interesting ruin). We went by every day. Many years later, when they were teens, they also loved all the cats in Athens. And if you are in Kyoto, the deer park in Nara is very very cool.

We had a lot of monkey encounters in Costa Rica, yes, staying outside Manuel Antonio National Park. Lots of monkeys on our hotel balcony, lots in the national park, lots in general, all three of the local species. It was great.

Crabbing is a good experience pretty much anywhere on the Bay. All it takes is a chicken neck, string, and a crab net. Kids will spend hours crabbing.

Day boat trip from Crisfield to Tangier Island VA or Smith Island MD.
Child will see a lot of birds and will learn a lot about the life cycle of crabs. You will see crabs in the Tangier Sound. Sometimes I see skates.
On the islands you will see crabs in various stages of growth...peelers etc.
